Mango-chutney feta with lentil salad

This is a quick and healthy lunch recipe that you can make in 20 mins. The salty, creamy and tangy mango feta goes so well with the crunchy salad and flavoured lentils.

I’m going to be honest, I’ve only recently gotten into lentils. I used to think they were just mushy and tasteless, but I found the most delicious jerk lentil recipe a few weeks ago and my mind completely changed. After this meal, I still had the world’s biggest portion of green lentils ever, so I had to have a think about what to make with them.

And that’s when I decided to make this lentil salad. When I first made it, I was in a rush and honestly was expecting it to be a really bland meal, but me and my girlfriend made it and it was honestly the tastiest salad that I’d made in just 20 minutes.

But lentils are not enough by themselves, or at least I don’t think so. That’s why I topped it with soft, baked feta that was smothered in mango chutney. It only took 20 minutes to bake and it comes out so gooey and delicious.

Baked mango feta with lentils

Servings: 2

Preperation time: 5 mins

Cooking time: 20 mins

Ingredients
  • 100g lentils
  • 1 chicken or vegetable stock cube
  • 200ml water
  • 1/2 red onion, finely diced
  • 1/2 cucumber, finely diced
  • 6 cherry tomatoes, chopped
  • 1 spring onion, sliced
  • Handful of coriander, chopped
  • 1 tbsp lemon juice
  • Salt and pepper
  • Half a block of feta
  • 2 tbsp mango chutney

Baked mango feta recipe

  1. Preheat the oven to 200 degrees C. Boil a kettle of water and add to a pot with one chicken or vegetable stock cube. Once the water has boiled, add the lentils and cook for about 20-25 minutes or until they are tender but not mushy.

  3. Meanwhile, cut the fet into two large chunks and place in a baking dish. Smother with mango chutney. Once the oven is hot, place the feta in the oven and cook for 20 minutes until soft and gooey.
  4. Chop and dice the onion, cucumber, tomatoes, spring onion and add to a bowl. You can also add any other fruit and veg that you love.
  5. One the lentils have cooled slightly, mix the salad and lentils together. Season with salt, pepper and lemon juice (you could also add a little cumin).
  6. Place the lentils on a plate. Take the feta out of the oven and carefully place it on top of the lentils. Serve with some more chopped spring onion and coriander.

Tip: if you want a little extra sauciness, create a simple yoghurt dressing with lemon juice and coriander.
