This recipe is quick, easy and a great dish that will make you feel like you’re at a summer barbeque. It can also easily be made vegan.

So it’s been a hot minute since I last posted a full recipe. Between moving house to starting a new job to generally being an adult, I haven’t had the time to sit down and create proper recipes for all the things I’ve been creating. But I made these corn ribs the other night and they were just SO GOOD that I had to share them.
To make these ‘ribs’, you only need corn cobs, a few spices, some butter (or oil), mayonaise and paprika. That’s it! I hope you enjoy.
Corn ribs recipe
Preperation time: 5 minutes
Cooking time: 25-30 minutes
Servings: 4
Ingredients
- 4 corn cobbettes
- 1-2tbsp butter, melted (substitute with oil or plant-based butter)
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic granules
- 1/2 tsp salt
- Pepper, to taste
For the mayonaise:
- 2 tbsp mayonaise (or vegan alternative)
- 1 tsp paprika
- Salt, pepper and lemon juice to taste
Corn ribs with paprika mayo
- Begin by chopping the cobbetes, carefully. Cut into 4 individual ribs and place in a bowl. Preheat the oven to 180-200 degrees C.
- Add the herbs and spices to the bowl, season with salt and pepper and add 2 tbsp of melted butter. Using your hands, mix well until the corn is covered in spices and butter.
- Place in the oven and bake for 25-30 minutes, or until the corn ribs are as crispy as you like.
- To make the dip, simply mix the paprika and mayonaise together. Add salt, pepper and lemon juice to your taste. You can also substitute the paprika for chipotle, chilli powder or lemon.
- Serve with chopped coriander or fresh chilli (if you like it hot).
